Wild elegance: experimenting to show the world of wild yeasts

OVAL

This is how we make... Brett Beer

A deep straw yellow beer with a light head. It has distinctive citrusy scents and gentle wild notes, with some fruity and spices hints. The noticeable taste of citrus fruits is counter-balanced by the notes of wild yeasts. The bitterness is harmonious and balanced with no excessive peaks. A perfect embodiment of the Baladin style. Oval elegantly hides the alcohol content thanks to its extremely dry character.

Ingredients

Water, barley malt, hops, mix of citrus zest in variable proportions, yeast.

OVAL
history

Once again, Oval is the result of Teo’s desire to explore the world of yeasts. Starting from a beer made with 100% Italian malt, he has embarked on a journey to show what wild tastes are. At the final stage of fermentation, he has experimented with the use of Brettanomyces bruxellensis, combined with a strain of yeast isolated from bark.
