This is how we make... Bière de Champagne – Brut Bière

Metodo Classico Cuvée 36 months has a light amber color and a light, hazy white head. 

The scent is characterized by an astonishing freshness, intense floral and balsamic notes of aniseed, accompanied by hints of honey from the grains used in the recipe and scents of wood.

The rich taste is initially dominated by notes of cereals and intense spicy hints of angelica, reminiscent of aniseed. The enveloping, yet subtle finish reveals woody, roasted, almost tobacco-like nuances that come from the time spent in wood barrels.

history

Metodo Classico Cuvée 36 months is the result of a choice made in the cellar, when tasting the 2017 vintage beer just before the beginning of the remuage process. The intense bouquet of that first sip impressed Teo and Palli to the point that they decided to continue the aging process for a small part of the production. 36 months of aging on the yeasts have created this extraordinary craft beer produced in only 3,328 bottles. To pay homage to this cuvée, we have chosen a sophisticated label with a gold foil with the sequential number of the bottle. But that’s not all... in the cellar, we still have a small batch that is in no rush to meet its public...
