NAZIONALE AND SEARED OCTOPUS, TURNIP TOPS AND CHICKPEAS

Here we are ... The time has come to find out the pairing that our #chef Christian Meloni Delrio of Casa Baladin did with #Nazionale. A really delicious dish: "Seared octopus with turnip and chickpeas". Will be good ?! Take a look and enjoy ! 

 

Ingredients:

1 Octopus

1 bunch of turnip tops

150 g celery

150 g carrots

150 g onions

2 garlic cloves

extra virgin olive oil

chili pepper

 

Preparation:

Boil the octopus with celery, carrots, onions and a bay leaf, until cooked. Prepare a layer with carrots, celery, onion and a clove of garlic. Add the previously soaked chickpeas and cook with the layer. Blend the mixture, sift it and put it in the seltzer siphon. Clean the turnip tops and separate the leaves from the tops. Take the leaves and parboil them in a pan with garlic and chili oil. Take the parboiled tops, blend them with oil, garlic and chili pepper. Finally sift the compound. Boil the octopus in a pan with butter, oil and a clove of garlic.

Dish composition:

On the bottom put the turnip tops cream, the octopus cut into pieces and at last the leaves sauté. End up with the chickpeas mousse, garnish as desired and serve.
